💫 Preheat oven to 200°. Put the red onions (2 - roughly cut), courgettes (2 medium - cut into thick chunks), peppers (3 - mix colour) and aubergine (1) in a roasting dish and drizzle with oil and cook for 25-30 minutes. 💫 After 5-10 minutes add your frozen @lindamccartneyfoods sausages and cook for 20-25 minutes. 💫 Meanwhile, spray some oil in a saucepan over a low heat and add some garlic powder (1 tsp), tinned tomatoes (2 400ml tins), balsamic vinegar (1 tbsp), honey (1 tsp) and bring to the boil. Simmer for 15-20 mins. 💫 Cook pasta (300g). Cut the sausages into chunks and combine all into a baking dish and scatter cheese over the top. Bake for 15 minutes.
